Our ethos ↓

Our ethos

Local is best

Wherever we cook, we buy from the farms, bakers, coffee roasters and smokehouses around the site. The food is better for it, and the money stays in the community hosting the event.

  • Welsh first

PGI Welsh lamb, Welsh beef, and Welsh butter, yoghurt and cheese, before anything from further away.

  • Fresh, every day

Chefs cooking from scratch on site, with a menu that changes every day.

  • Fairtrade

100% Fairtrade tea, coffee and sugar, and coffee roasted in Wales.

  • A local crew

30 of our 2026 crew were recruited in Wales, and every customer-facing role is bilingual.

Sustainability

  • Real crockery

Real plates and crockery in Platiad, and compostable packaging only where there's no alternative.

  • Bring your own

A bring-your-own cup and plate scheme that cuts thousands of single-use cups at every event.

  • Waste sorted at source

Recycling, food waste, glass and cooking oil separated on site, and the oil recycled.

  • Cooking to numbers

We count every meal every day and plan to demand, so less ends up in the bin.

“Welsh provenance will always be promoted. It is a mainstay of our business model, wherever we are.”From our Royal Welsh Show tender, 2026

Food theatre

Things others don't do

We cook in an open, food-theatre style, with much of the cooking happening in front of the crew. It keeps quality high, creates energy around service, and turns mealtimes into shared, social moments rather than a queue and a tray.

  • Hog roast in the crew marquee, Roundhay 2026Hog roast cracklingHog in the roaster, Roundhay 2026

    Hog roasts

Whole hogs slow-roasted on site, with crackling, stuffing and apple sauce.
